What if you have a white wine that’s too warm? Here’s a foolproof, dazzlingly simple tip. When you are in a hurry to chill a wine, add about a third of a cup of salt to the ice bucket. Yes, you heard me right, salt. Using salt water in an ice bucket cuts the chilling time by one third – in the case of a bottle of white wine, from fifteen minutes to a mere ten. Why? Because salt causes ice to melt at a lower temperature than fresh water.
